I will have to venture on to that board for sure as I do farm and would like to get into mushroom farming. Used to raise peking duck but that breed was always too noisy(20 acre farm with a pond) as I raise quite the flock(usually 100 ducks; 3-400 chickens a summer). Muscovy duck is definitely my favorite to eat though; they are very intelligent and can scavenge on their own. The breasts are definitely the best for those who don't eat duck as they taste like beef and on occasions, I make steak out of it. This summer I plan on raising 600 chickens and have a nice flock of about 30 ducks atm which should give me close to 250 ducklings throughout the year. I will have butcher them younger and see if they are any good for a roast.

My diet is unhealthy but slimming.
I have only one meal a day; dinner. I have whatever I want. All my favourite dishes.
With time my appetite has gone down so I only need that one meal and the meal itself is usually quite small. That means I am steadily losing weight even though I have carbonara, lasagna, steaks... whatever I want to.
I have a few units of alcohol with it as well usually; wine, beer, whisky... but I never get anywhere near 2000 kcal in a day.

Some days I do feel like having a second meal, usually late at night, and then I have it. Ramen or an omelette or something.

I use a Dutch oven. 450 with the lid on for half an hour. Then I take the lid off, usually another 15 minutes or so. I get a pretty nice boule.

Like the other anon, I do 450 for half an hour. I don't use a Dutch oven though. Actually, I do 500 for 3 minutes and heavily spray the sides of the oven every 30 seconds, then drop to 450 for half an hour. When the bread is done, knocking on the bottom of it will sound hollow. If you're not sure, if it's done, just leave it in. Maillard will happen on the crust and make it tasty. An extra 10 minutes won't hurt unless the crust becomes visibly burned.
