The most important thing to have it a jug of oil around to douse hot oil when it gets out of control. just dump the entire jug on it when your oil starts to smoke.

don't cook things at a higher temperature than they can handle. The metal your pan is made out of shouldn't change this.

They're not non-stick. You might need a plastic scrub pad and a liberal application of elbow grease to get rid of any burned on oil or residue.
