This is definitely a tough question. I am German, and I definitely like German cuisine: Currywurst, Pea soup, Spätzle, Jägerschnitzel, etc. etc.
At what part does something stop being part of German cuisine though?
Is it okay for me to eat Currywurst with fries? Fries originated in Belgium, after all.
And is it okay for me to eat Wiener Schnitzel? That's an Austrian thing, after all.

Spanish cuisine is totally underrated I agree. But from what i've tasted it doesn't have the refinement of french or italian. Like you said it's less formal/refined so it doesn't push the idea to its limit. Sure spanish chefs have been popular in modern/molecular gastronomy but i'd take italian/french rustic dishes over spanish most of the time.
Even in cheese and wine it's less varied than french or italian. I haven't found buttery white wines or sparkling red wine in spanish gastronomy, neither cheeses like burrata or reblochon. I'm probably unfamiliar with the total scope of spanish cuisine but from what i've eaten, it's good but not as a good overall as french and italian.
