I was mostly talking about the skin on poultry feet; hmong style cooking where you fry it first then pitch it in the steaming so the skin releases and puffs away from what very little meat there is and then you braise it in sauce until it's fairly tender and sauced throughout;

but oden generally contains aburaage. Fried tofu skins that are often simmered in sauce. I like to use them to make inari-zushi when I can find them.
