It is traditionally with rooster, which is why I think it's often flambed with cognac prior to stewing (the idea is that this step helps tenderise the tougher rooster meat). Rooster is often tricky to procure in most US markets so most recipes just call for chicken. If you can't find rooster, try guinea fowl. I believe the meat is closer in texture to rooster than it is to chicken.
