It mostly has to do with picking it up.
Long pasta is easier to curl around a fork in one go whereas broken pasta means you're chasing strands around the plate.
This also comes into play in terms of cooking, like if you want to reserve the starchy pasta water to help adjust the consistency of a sauce. With unbroken pasta, you can simply use tongs to remove the pasta and keep the water in the pot. Tongs don't really work well on broken pasta, so in order to reserve the water you generally have to strain it into another bowl which is less convenient and requires cleaning another thing.

Snapping it does also tend to send a shard or two flying which you have to chase down.

These are admittedly minor things that sound mostly like nitpicking, but to make a counter question: Why bother snapping it when you could simply wait ten seconds for it to soften? You have to stir the pot at the start anyway to prevent sticking, so there is no extra effort involved, but there is when you snap.

Personally, I don't like long strands, and I never wrap them around my fork more than once.

When eating unbroken angel hair spaghetti, you'll have to wrap it around the fork countless times so that there isn't a strand hanging low off the fork which will drag across your face.

Maybe it is surprisingly a slight more effort with the snapping, but it cuts down on having to twist the fork countless times to actually eat the ridiculously long pasta. That and I don't save the pasta water.

With such a benefit in mind, counter question: Why take issue with this technique if the only reasons to dislike it is because you want to save pasta water easier and like absurdly long spaghetti?
