Looking to make a soup for the week for me and my GF.
Instead of making leek and potato (pic related) or beef stew like I usually do I want to branch out.
Hit me with your favorites /ck/ .

Pumpkin cream soup.

Low heat, little water, simmer the following (chopped): 2 carrots, small parsley, half a celery, a couple crushed grains of black pepper and allspice
(you can add a potato or two if you want to have a thicker, more filling soup but I don't recommend it, it flattens the flavour considerably).
Remove seeds and skin from a pumpkin, dice it, add to the pot (you can also roast the pumpkin in the oven first, just a touch of oil, low heat and no cover).
Boil on LOW heat until veggies start coming apart. (doesn't matter if you overcook it a little).
Blend until smooth. If it comes out too thick feel free to add some hot water.
Add a little (like a teaspoon each) of butter and dark honey, they really bring out other flavours.
Season with cinnamon, ginger and nutmeg (just a little).
Serve hot with croutons and a splash of cold sour cream.
The soup keeps well in the fridge and the taste might actually improve overnight. Good luck!
