this is really a cool technique and a part of old school jerk, the metal lid right on the meat helps hold smoke and steam right on the meat and that tends to help flavour and tenderize

I've actually eaten there. It's a place called Scotchies in Jamaica. Insanely good food, though they gave me shit for asking for more jerk sauce. The secret is the logs they cook on.
