How would nobility from medieval Europe react to their personal chef bringing them a modern day, freshly made burger from a typical fast food chain? Assume all ingredients were made and prepared and the burger itself was cooked and assembled as freshly as possible.

They would probably not be impressed. Medieval nobility had marvelous meals prepared from game and choice cuts. Look at some of Heston Blumenthal's dishes based on medieval recipes-- pretty good compilation of research. Things like chicken liver pate made to look like fruit, massive sutured roasts of many different fine game birds, spices galore, etc.

They probably wouldn't eat it. The middle ages had some really weird beliefs about food. They had this belief that food was heavy or light and putting heavy food on top of light food would cause it to sink and give you indigestion or disease. As a result they had weird classification systems of food relating to the humors of the body. Like hot and cold and stuff. Like fish was considered a "Cold food" even when served hot. I don't know it was complex. Look it up if your bored.

I think you're wrong, they would more than likely be amused by it especially the extremely cake like bread, the mysterious red fruit, the oddly satisfactory balance of the meal and would likely get their chefs to try to replicate more until they got bored with it or dedicated their entire kingdom to the act of replicating the burger to the point of being called the burger king

Modern food is pumped up with artificial flavor enhancers - and our modern sauces are so rich that it would likely blow their minds.

How good these things taste chemically is part of the reason of their success.

To someone form that period that' used to some light herbs, not much if any salt - it would be a shock to the palette.
