Nondairy cheese is generally made of:

1. Oil
2. Tapioca starch
3. Kappa carrageenan

The tapioca starch is used as a binder, because it 'melts' and gets stringy, and the kappa carrageenan is a gelling agent that makes it firm but that also melts when hot.
