Let's talk about stew, /ck/. What's your favorite kinda stew? How do you like making yours?

Chili con carne, TX-style.

>buy beef chuck roast & cut my roast into pieces, toss w/ salt and lime juice
>oil/butter mixture in bottom of dutch oven
>maillard the chuck roast pieces
>transfer roast pieces out of oven into bowl
>add butter to dutch oven, melt, add some flour for roux, bring to nutty brown color like the ass of a 10/10 mulatto house nigger
>add onions, peppers & caramelize
>add chuck roast pieces back
>add 1 diced tomato and beef stock
>low heat for 6-12 hours
>serve in a bowl sprinkled w/ cilantro & green onions and crackers/cornbread.

Forgot pic. You can remove tough tendons before cooking that way, as well.

>beans soak for 2 hours (the more dry ones, not large raw ones thar smell like fish)
>after soaking boil them in water, large pot
>take them out and drain the dirty water, then put new clean one and continue boiling the now clean beans
>chop onions and fry them on lard
>when they turn a bit gold, dump them and the grease from the pan into the pot with beans
>any dry smoked meat goes, bacon preffered, but dry beef, mutton, other dried pork, jerky anything, even bacon skin everyone throws away (just boil it separatly until it can be cut with a spoon)
>leave it on low heat for some time until the liquid starts to thicken a bit
>add salt, 1 soup spoon, also black pepper as much as you want
>add just a little bit of tomato sauce because the stew will be pale at this point, just a dash of color

Eat it with any bread you like and it goes great with pickles.
Simple, but 2 bowls of it will keep you fueled for days. I could eat beans once a day for the rest of my life and remain happy.
Note, add half a teaspoon of 9% vinegar in the bowl if you want silent farting
