Lets settle it once and for all: which cheese is better-pecorino or parmigiano???

locatelli

Do you mean well-aged pecorino against dollar-store parmigiano or gas station pecorino against stock market parmigiano?

Not the OP, but let's assume both are of equal quality.

Definitely the Parmigiano Reggiano. I find it much more versatile. Pecorino is good, too, but it's much more salty.

I prefer Pecorino, but I love both and won't turn down either one.

Have different uses but both are great really even if I prefer pecorino.

Now gran padano, that's a lackluster cheese compared to those two. Is it ever only used as a cheaper Parmigiano substitute?

Why

>> No.10038904

Parmigiano, but I'm biased because i was born in Parma. I eat chunks of it when i've got it, expensive as a motherfucker in the states.

On a good day I can find it for $12/lb., which is still a lot compared to other cheeses.

Parmigiano. While Pecorino is very tasty in those specific recipes, it is usually overwhelming in most others. Parmigiano gives all the cheesy goodness while complementing most dishes.

GP is literally a larger controlled area with fewer regulations. The wheels of parm that don't make the parm grades become GP.
