I make something similar, my version of coleslaw without all the sugar or mayonaisse that retards for some reason insist on adding.

Slice or grate carrots and cabbage, udually red cabbage, salt a bit, squish it around like when making sauerkraut, then drain the liquid and replace with cane vinegar. Soemtimes I'd throw in onion with it too, or fresh ginger. Goes great on pulled pork sandwiches.


OP best bet is make sauerkraut, but hope you've got a month until you need it lmao.

Also sometimes I'll just chop up the cabbage, toss it in a skillet with some olive oil or whatever to fry it a bit, then toss in red pepper flakes and some sesame oil. Tastes good and easy.

Beer braised cabbage is easy & quick

-Shred 1 Quantity of cabbage and 1 Lesser Quantity onion
-Sautee onion in stovepot in half butter/half oil til just starting to color
-Add cabbage and some thyme, season and cook til sweaty
-Poor in bout 1 inch beer, splash of vinegar, splash of worcestershire, dollop of grain mustard, mix it all up
-Simmer covered 20 mins, cook down afterwards if u feel like it
