the longer the more gambling you're taking, especially for lower abv stuff. and anything with adjuncts (the coffee in KBS) is sure to either fade or change into some different flavor.

things like bourbon county though are pretty much tried and true when it comes to aging and most people find they improve or at least favorably mature in the types of flavor you'll taste.

my gut tells me you should do the following with your pic beers: BCS 2-6 years, KBS fresh or 1 year, world wide stout 1-5 years, CBS fresh or 1 year, backwoods 1-2 years, the other base stouts I'm guessing fresh or no more than a year

IPA is a trash beer for folks with trash tastes. Had only a couple that were tolerable but there's just nothing good about them. And what makes it worse is the whole IPA culture surrounded around those who drink IPA. They think it's the end-all beer when any respectable Stout, Brown, Porter, or Red are just better by miles.

But beer in general is a shitty drink.

I'm countering your assertion that a base malt stout will be bad after 5 years. The expeditions we opened didnt suffer at all. You can make your big bad assertions but until you show an open bottle in just going to sit by the fact that you don't have the collection to enjoy anything old enough to make a statement about age. I didn't give my photo dates and the vomit Comet still rides with the smell of good beer and cured venison (fuck I hope it comes out). good job, you actually made a specific argument for once!

going back to my original claims, my premise was that if age things long enough you start gambling on them being good. this is entirely true! and with base stouts it's very precarious how they will turn out. half of the generic base stouts I let age past 3 years end up tasting thin, alkaline, and generally not as good as their previous years. beers made to be aged, especially those more complex and higher abv do fare better, but things like base stouts, porters, low abv ales, etc all suffer after 5 years. barleywines do seem to fare the best (because my assumption is that most beers end up developing barleywine-like qualities from prolonged oxidation so it doesn't change their original profile that much).

thought exercise: search your favorite base stout on untappd and specify 2013 vintage or earlier. you will note that the most recent reviews will most likely say "thin", "past its prime", etc if they've tasted them in a vertical or know what their fresher counterparts taste like. it's true whether you want to stubbornly admit it or not, but only the best beers survive past a certain age. in general most beers will suffer by age 5, and my cellar reflects that fact because I've let far too many beers get to that age only to taste them and realize I've fucked up by not drinking them sooner. and I'm not even talking about adjunct stouts which will certainly show age much faster depending on what ingredients were used.

you should also be aging bad (fresh) beer. lots of beers peak at a certain point, and usually within the first year or so. sometimes breweries nail it and they're best day 1 fresh, thoughI find that the majority of beers are good within the first year, whether day 1 or 180 or 360. lots of high gravity beers can "hold up" well, especially fuller body beers, but is that the same as "improving"? my experience says no, only a fraction of beers actually improve past the first year or two.

They've got dark IPAs, which are pretty good. Dogfish Head's Brown IPA, Guinness Nitro IPA.

Back when I was drinking lagers, I got into Shiner Bock, Bud Black Crown (not even sure if they make that any more), Dos Equis Ambar, Michelob Amberbock. Amber Ales are your next step from there: Fat Tire, Dunkels, etc.

Then there are black lagers, which I've not had in a while, so I can't tell the difference between those and stouts. Best black lagers I've had are Shiner Black and New Belgium's 1554.

Going for stouts, start with Guinness. Having had better, Guinness tastes like water to me now. A lot of people say it tastes like soy sauce. Either way, it's a good place to start. For porter, start with Bell's.

Best advice I can give you.

of course it isn't a meme. cheap lagers are ice cold because it masks the awful corn flavor. warming the beer up unlocks flavor basically.

$26 for a bomber of Tart of Darkness
though i did receive a free bottle of a 2008 vintage of Hurricane Kitty by Keegan Ales which was $40. thank god it was free because it tasted like shit.

fucking love pic related - hoponius union by jack's abby. amazing IPL i can't find anywhere outside of new england, it's been ~3 years now. they've since changed to a much more generic label design, which is unfortunate, because the bottle was a thing of beauty in itself

Picked up some Franziskaner Weissbier from the 7-11 the other day. I've been looking for something ~5% for sipping on ever since they replaced my old trusty Veltins with shitty Peroni.

It grew on me the more I drank it, but I'm not eager to pick it up again. The search continues.
