Who curry where?
im currently using regular curry powder and curry paste in a pouch from the asian store with cream cheese and cooking it with chicken.
id like to make my curry dishes creamier and spicier.

I've done it the Indian method using onions, garlic, ginger, peppers, garam masala, and various spices. Its pretty simple to make, but i am never satisfied.

Try caramelizing the onions or even almost burning them for a deeper flavor, and add more cream/butter.

This is the only brand of storebought curry pastes I'll use, when I don't have time to make it from scratch. They have better flavor, color, and spice compared with any other I've tried.

Not op but yogurt. Went to an international market that looks like a warehouse for the East India Trading Company and picked up a bunch of spices. Used a mortar and pestle to grind all the spices and went with fresh for everything but tumeric; tumeric was dried but whole and very flavorful. Following Madha Jeffery's Tikka Masala recipe as a former culinary school chef and it was fantastic. Just go for it and try it at home.

You can use anything, but it's usually heavy whipping cream and/or butter/ghee. Butter will taste milder but ghee has a deeper flavor from the browned butter solids. You mainly just need some fat though.

Op here carefull with certain items for curry from certain parts of the world. I was getting tumeric from lee lees and saw a warning sticker stating there were traces of lead inside.

Try Lobo. Literally everyone in Thailand not living in some middle of nowhere village use Lobo.
Also, their TV spots are funny as hell, although slightly racist.
