If that's oil:
1. Put a lid on the pan
2. Drain the oil from the pan
3. Continue cooking the scrambled eggs on a low-medium heat
Optional: add butter, then at the end add creme fraiche/sour cream + chives. This'll make it creamier and give it a sharp taste. Use the oil for something else if you want.
