The reasons are simple: produce changes with the seasons, different varieties taste very different, so do different parts of an animal or plant. Then there's the coming and going of other masters: in oil, vinegar, spice production, knife making, fishing, rice farming, pasta making... I'd say 10 years is too short.

Try making sushi yourself and find out. There are a lot of things you have to do by feel and getting them wrong makes the sushi noticably worse.

Most traditionally "hard" recipes will turn out fine your first time if you can follow instructions. Like I've never had problems with croissants or macarons. If you have a thermometer basically any method of cooking protein is foolproof.

It took me at least a dozen attempts at making sushi before I felt like I was doing a consistantly good job and I was only using salmon and tuna.
