I'm a fan, but they do require some amount of advance planning and attention to prepare, and they are a non-meat source of protein, so needless to say the hikkis of chicken nuggies central will probably have a raging shitfit at the sight of this in the catalog because they believe there's a global vegan conspiracy to take away their nuggies

I'm finishing up a 9 qt staub full of bola roja beans that I made last week with dried pasilla de oaxaca, dried chipotle, fresh red bell pepper, and fresh serrano

Got a pound of these soaking tonight, will be making them with some turkey stock and thick cut bacon, may toss in some rosemary and a head of garlic

I don't like pressure cooked beans, they tend to go from tough to disintegrated way too fast when you need to be sampling during the final phase to get them perfect. I use my pressure cooker for stock but not for the bean part
