I'm actually curious about Eastern European cuisine /ck/.

My family is Slovak and Polish and I had the pretty standard suburban white upbringing completely devoid of anything that might be called "culture". I wanted to explore cooking Eastern European cuisine as a way to remedy this, to a degree, and I've found a couple of cookbooks, but most every recipe is along the lines of "take meat, throw on salt and paprika and bake." It's hard to find anything that's particularly...I don't know, inspiring?

Any thoughts? Are Polish and Slovak cuisines just inherently extremely simple and without much variety or am I missing something?
