What advice would you give to an anon whos decided a resolution of his is to learn how to cook? What would you have liked to know when starting?

Easy.

1) Every dish needs to have four things - something salty, sour, crunchy, oily and umami.
2) Sour can be balanced with sweet
3) Sweet can be also balanced with spicy and vice versa
4) Salty can be balanced with bitter
5) Oily can be balanced with aromas like herbs
6) Umami can be balanced with something fresh like cucumber

That's it. Cook whatever you like and put the 5 basic things in. If you fuck up or want to play around, use the next 5 rules.
