Sometimes I just drop a can of sardines and their oil over salad greens with some croutons, maybe with a dash of vinegar and oil to balance out the amount of salad greens that need dressing.

I love them. But I live in NYC where they're a specialty shop item (you have to go to a store that has Italian and/or Spanish imports), and they charge a premium for them. Hard to do that all that often when I can get locally smoked mackerel for way cheaper and it's just as satisfying. But I will treat myself to boquerones every now and then. My #1 advice to all tinned seafood eaters is avoid Chinese sourced products.
Even the wild caught in the Atlantic but shipped to China for packing brands.

Best sardines come from Morocco. Hands down.
Pacific sardines are pretty good too but
nowhere near close to Mediterranean sea sardines.
Thailand/Vietnam are just a step above China sourced.

As for Herring, I like what comes off the German and Polish fishing vessels and packing plants.
Feel free anons to chime in on your personal favorite source waters for your canned fish.

Those are delicious. If you like those, you should try that brand's Pacific White Anchovies. They're the size of sardines, but with a milder flavor than Mediterranean anchovies. They're really nice straight out of the can.

I would agree about sardines from the Med sea, and add that Brislings from Nordic waters are best if you like smaller deenz.

Chinese deenz that come in the bigger oval cans are disgusting and need to be cooked with lots of hot sauce and onions to actually taste edible. pair them with spicy raw onions and spicy full-grain mustard too. I really dislike the larger deenz but will eat them if there's nothing else on hand.

i had some pretty nasty Polar-brand herring the other day. i'm pretty sure the can said the source was Poland. it was in rapeseed oil. that's all i can remember. just salt for seasoning. must've gotten it at the 99 cent store.

i had a Brunswick smoked herring and it was a lot better. thicker, fuller, not watery like the Polar one. never getting Polar again but maybe i just had bad luck that time.

All in all, can't go wrong with smoked herring from a brand that sources from Canada or Nordic waters.

the texture changes. the french have a taste for aged sardines, but a sardine canned for aging is different from a sardine canned for pop-n-munch. the fish are selected from the oldest shoals in cool oceanic waters. mineral-poor, high drainage seabeds and low density schooling are de rigueur. whole-family tinning is also normal as separating the individual fish can stress the bones which isn't a problem if you eat them immediately but it can result in a mealy texture with age.

due to the higher bones-to-flesh ratio these are not fish that will be pleasant if consumed immediately after canning. they must be rested, in the horizontal position, with minimal vibration and no exposure to light or heat, for 10+ years. I lucked out on a case of the 2013 sardines gascognes en primeur, these will be eating well for another fifty years based on the tin I cracked open this fall. definitely not quite in their prime yet, as is common for the finest catches.

for your average mass-market plebeian tinned sardines it is best to consume immediately. decanting for 20 minutes is suggested to blow off the volatile acidity and sulfurous notes.

My girl had some funny prejudices when we first hooked up, but thankfully fish wasn't one of them. She thought she didn't like Mexican or Indian food. I realized her only experience with Mexican was fast food fake Mexican and the bad Tex Mex they serve at margarita mills. And her only experience with Indian was bad lunch buffets. Slowly over time I made her taste the good stuff, and now she loves both cuisines.

Fish is tougher. I have a niece who couldn't handle fish. The rest of her family loves it, so it wasn't like she wasn't exposed to it, she just didn't like it. Now after 17 years of exposure to it she'll eat mild fish without any problem, but any shellfish or strong tasting fish (like sardines) doesn't do it for her. But I'll give the girl props for still being open to it. She's tried both clams and squid with me, even though she didn't like them. Here's hoping your girl eventually comes around.

only big fish like tuna, swordfish and salmon have accumulated mercury that can affect you. canned tuna, or sushi-grade tuna, doesn't matter. all have heavy metals.

sardines, anchovies and other small fish, or fresh-water fish like trout, have absolutely no mercury because of their size and lifespan. it's basically impossible for small fish to accumulate toxins and heavy metals, whereas bigger fish all have mercury, heavy metals, and even plastics in their body.

if you don't believe me, look it up. do a search for bioaccumulation and read for 2 mins. it's all there.

the only concern across ALL canned food, including canned fish and sardines, is the potential BPA in the lining of the can. BPA is known for being a very bad chemical that disrupts your reproductive and endocrine system.

if you want to avoid fucking up your future babies, avoid all PLASTICS and any canned food that has BPA lined cans. usually it will say on the label if it is BPA free can.

if you're absolutely concerned about the health of your future babies, definitely consider moving as far away from any major city as you can. but if you're set on living in a big or mid-size city, your kids are gonna be fucked by all sorts of pollution and negative influences anyway, so canned fish will be the least of your worries.

Those are tasty in spite of being packed in cheap soy oil. Slightly more smoked than most US brands. There's a regular and a spicy version. Open over the sink, drain off oil with hot water running and have at them. Moroccan sardines are my current fave canned sardines.

My suggestion: get some whole wheat pasta, cherry tomatoes, oil cured olives, capers, chili flakes, olive oil, garlic, parsley, and a lemon. pit the olives.

Halve the tomatoes. Start boiling the pasta. Drain the sardines and discard the oil. In a large pan, fry the capers, garlic, olives, and a generous amount of chili flakes in the oil for about 30 seconds, then add the cherry tomatoes and cook until they're starting to soften a bit. Reserve a bit of the pasta water, drain the pasta, toss it in the pan with the rest of the ingredients. Toss until everything is mixed, adding a little pasta water if things stick. Add the sardines, toss just until they start to break up, then plate.

Top with the chopped parsley and a squeeze of lemon, and you're good. Drink with a cheap white wine with high acidity. Albarino or verdejo or something like that

It's the cheapest possible third-rate vegetable oil
It isn't the "healthy fats" you associate with fish
The sardines themselves have a strong enough flavor and smell on their own
I find the resulting dish unbalanced and heavy if you keep the canning oil, personally I do not think it's enjoyable that way
But the best way to find out if you like it is to try it yourself
