What kind of cookies should I make?

From scratch, please. Was thinking maybe a shortbread with fruit and chocolate would be nice? I'm open to creative ideas!

Just don't want plain sugar cookies.

i made really great amaretti once from absolute scratch... made my own almond flour and everything. give it a try if you like cookies with tea or coffee.

I have almond flour, but I'd rather something with fruit or chocolate that I can eat on its own.

If you're feeling like fruit and chocolate, on Christmas Eve this recipe worked well when I added some orange flavor.
https://pinchofyum.com/the-best-soft-chocolate-chip-cookies

changes
>substitute 1/8 cup flour for 1/4 cup cocoa powder
>only use a half teaspoon vanilla extract
>add zest of an orange, and a quarter teaspoon orange extract.
and I broke up a lindt dark orange chocolate bar to use as the chocolate chips. You could probably do without the orange extract if you want, it just adds some potency.

I was thinking of using white chocolate because I haven't had it in years.

Make one batch of double chocolate dough, and another batch of vanilla and mint dough (possibly color green with food coloring). Roll them both out into sheets, place one on top the other, roll it up, slice into cookies, bake until done.

Good idea for next time. I am making pineapple and white chocolate cookies. Should I add coconut or is that a weird texture?

Do you let your cookies rest before baking? For how long?

toast coconut first if mixing in batter. helps with texture.

Ok so cookies are in the oven now. Used some sweetened coconut flakes, walnuts, orange extract, and white chocolate along with a fairly basic cookie recipe. Hope they come out ok! Anyone else made cookies lately?

Oh, and dried pineapple.

Oooh orange and white chocolate sounds lovely. I hope the coconut doesn't clash. Let me know how they are. Hope you have milk/coffee to go with them.

i forgot to make cookies for christmas so i pooped out some chocolate & salted pistachio cookies

chopped up leftovers from a chocolate bar i got for christmas and pistachios i got for christmas and put it in a batter and wa-la

everyone loved them and they got eaten immediately and everyone talked about it felt very nice and good because it was just a "oh fuck i didn't make cookies better use my leftover snacks to make cookies"

Yeah that sounds nice. Hulled pistachios are great for baking. I just chopped up 2 white chocolate bars. I definitely add more salt than I used to for cookies and I added a little MSG for extra fravor.

Oh so I asked earlier but do you guys rest your dough before baking?

Plain sugar cookies with glaze are the best though. Next would be some kind of jam filled cookie like kolacky

yes, at least half an hour, more if I can

I love cookies, but they usually have no fiber and are so little filling I feel like I need to eat 20, so I usually eat none. Anybody got any high fiber recipes?

Made a few batches of gingersnaps with fresh ginger. Only change Iade was substituting white flour with oat flour. Made them much more filling in my opinion.
