I've not made egg drop soup and it's been so long since I got Chinese takeout that I could be mistaken but I'd whip up the eggs like I was making scrambled eggs first.

Dunno what the 'correct' method is, but I just whisk my eggs until they're uniform, and then pour them through a mesh strainer into the soup. The strainer moderates the rate at which the eggs enter the soup, giving you the thin folded strands instead of chunks of boiled eggs. You could easily come up with another method to pour them in, but don't do it all at once.
