Anybody here ever had beaver? My gf's uncle is a hunter guy and gave her a couple of pounds of it yesterday and she's going to make it for our Christmas Eve dinner since she's cooked it before and it's an old family recipe. She says one taste of her beaver and I'll want to eat it all night.

What am I in for?

The taste is highly variable. Older ones are useful for only roasts and stews while young ones are just fine.

Almost every Beaver that tastes decent was poached not trapped, if they say otherwise they are probably lying. They are perfectly edible if trapped but they are never tender due to the mechanics of it.

However if you pop a young one with a .22 they make excellent spit roasts.
