I'll have a pre Christmas Dinner with mates today before we all head home for the holidays.

Two are vegan so I'm making a lentil and porcini roast. Brown sauce, shiitake, tomato, miso and soy sauce for that umami. Pic related, mushrooms soaking.

Additionally Brussle sprouts, bread stuffing, chestnuts, honey parsnips and rosemary taters I recon.

Drinks will include self made Glühwein aka mulled wine.

Trying to make beef stew for some friends, how can I make the liquid more viscous? At the moment after adding the vegetables it just seems like beef/vegetable and soup

Strain out the solids after they are done and simmer the gravy down for an hour. Cornstarch or a little gelatin will add body too. Definitely recommend adding a teaspoon of unflavored gelatin if you have it.

Thinking about some kind of root vegetable that would fit well here. Maybe parsnip or parsley root, roasted in the oven, then cleaned and pureed?

There's only three of us for Christmas this year, so we're going with some classic family dishes that we love. Holstein Schnitzel, red cabbage (cooked with apples, onion, vinegar, red wine, etc), hot potato salad, cucumber salad, homemade pumpernickel bread, and some assorted candies and cookies for dessert. Simple, but tastes like home. For Christmas eve, I'm making a rich cream of mushroom soup using a variety of mushrooms, with salad and yeast rolls. Cream of mushroom soup on Christmas Eve is a family tradition.

With your fried fish with spicy sauce...I would think southern sides/fish fry accompaniments but with your twist of course.
Kale/collards/turnip greens, sauteed w/ onion, bacon.
Lima beans, black eyed peas, or even a medley idea like hoppin john to incorporate corn, okra, peppers.
To add in some other meat, you could make a jambalaya side, dirty rice with lots of liver, or grill some boudin, or drop in some boudin balls or hushpuppies or corn fritters into your frying fat before that fish goes in. If your pan frying, consider fried okra (just dust with corn meal), or green tomatoes.
Simple roasted new potatoes, or seasonal winter squash medley, with parsnips, or whatever root you might want to throw in there, might be nice. Can spice how you wish.

I am sick, so I am not doing short order cooking labor intensive anything. I will be buying rolls and dessert from a nice bakery in town. My mashed potatoes will be baked under a crust of butter and cheese (made ahead). And, I will be studding a rump roast with garlic cloves and roasting in my covered graniteware roaster in coffee, so I get rich dark gravy. Gonna steam green beans.
