They work with herbs, if you want the herb flavour to dominate the dish. They're too delicate for strong spices, so they'd be useless in a curry or Mexican food.

If you want a dominant onion flavour (whether raw onion or sweet caramelised onion) you're generally better off with red or white onions. I tend to go for red because they're sweeter.
