We make something called whitetrash chicken if we both have crazy schedules & need something quick.
Defrosted chopped broccoli
Thin sliced chicken cutlets
Cover with 1/2 can of cream of chicken soup & can of mayo mixed together
Bread crumbs
Cover in cheddar cheese
Bake on 350 for 45 minutes

Not saying it was a bad decision (thighs are said to be more succulent), it just seems somewhat unusual.

The crispy layer on top will be important to keep that theme. You're missing some mustard in your recipe and I think it's important. Make a bechamel and add your cheese that way. That's probably the best time to add the mustard and any herbs and spices. It could be pretty good with some trial and error.
