They never built up a resistance to capsicum so they experience a lot more heat than what younger generations who grew up with access to a more multicultural diet. maybe historically (Michelin is a French company, after all), but if you look at the Michelin guides for major cities outside of France, especially in the US, very few of the restaurants are French. look at NYC, for example.

Here's a short documentary I watched recently on the effects that gaining/losing a star has on a chef and his business. The host is kind of an annoying twat but there's good interviews with Marco Pierre White and Raymond Blanc plus some other smaller time chefs. Pretty informative watch overall.
