In that context, the cone either has "enough" or "not enough".

For a 300 dollar entry level, its best to just go to target and get one for 100 or so. There really is no gold standard or decent machines that’ll give you a bang for your buck. I still have a bit to learn about pulling a good coffee from it but my second one wasn't bad. I already know how to steam milk but it's been so long since I used an espresso machine that I only vaguely remember the packing, tamper weight etc. Doesn't help that the machine came with a plastic tamper that feels like it will break if I lean on it, I've ordered a good tamper (why the fuck are they so expensive?) and milk jugs.

It's not bad desu, I can pull my espresso and still do a pot for when friends come over to game. It's going to get a lot of use over the christmas break.

Because otherwise it'll be pulling shots in an absurdly huge temperature range. The PID locks it to within one degree instead of within 30 degrees. With a Silvia any given shot might be the right temperature, or it might be a totally wrong one, with zero way of knowing.

Additionally, you do want to adjust temperature for some different coffees. Lighter roasts around 200f, but significantly below that for darker ones.

Chemex, for when you want to pay $40 - $350 for a tacky pour-over that's going to look nothing like it did on Pinterest in your unclean, cluttered kitchen

Keurig, because fuck the environment

A hotel coffee machine, for when boiling water is too hard

Aeropress, a geeky piece of novelty junk that could just have easily sold on Vat19 as on Amazon. Made of shit-tier plastic that may leach into your coffee over time

Interestingly, with the V60s the only difference in sizes is the wall height. So you can do a smaller brew in the larger brewer no problem. With Kalita though, the whole slope changes. Both way shorter than the v60s, I think largely since they're more built around pulse pouring.

Someone talk to me about lever operated espresso machines. One of the cafes in my city makes way better espresso drinks than anyone else. I couldn't figure it out until I saw their gear. I understand you can get a new lever machine, for one, for around $800. I would be using it at home and I would only be making one drink, for me at a time. Cheap ones like La Pavoni (the $800 one you mention) are shit. Piss poor temperature stability resulting in inconsistent shots. There are three options for quality lever machines:

1) Vintage open boiler, like Arrarex Caravel. Probably the only one in your budget. Requires some work to fix up and get working on US outlets. No steam.

2) Modern open boiler. Only one I know is Strietman. Really great stuff, but expensive. No steam.

3) Spring lever. Also expensive. Lever operates by spring instead of by being pulled the whole time. Can steam.

There's sort of a fourth in that you could PID mod a cheaper one, but I'm 99.99% sure that's way beyond. They're not at all simple to mod.

If your problem is watery espresso, ya aint fixing that *just* by upgrading your machine. What grinder are you using? And what's your shot prep like?
