Hey /ck/

I'm normally over at /fit/ but I'd like to pick your brains about something. I recently got a Breville smart convection oven and I would like to take a crack at making some jerky (beef/chicken/turkey).

Any recipes that you would recommend?
Is there anything speicifc I have to do to have more moist jerky instead of something super dry?
I'm trying to aim for low carb/high fat/protein (part of a keto diet)

I appreciate you suggestions.

I've had some jerky that's really fucking tough, but then others which seem to have more moisture to it and are more tender. I didn't know if that was because of a special way of preparing it or if it was a matter of just simply not dehydrating it as long.

I have no idea what a smart convection oven does. Probably something stupid and pointless that has DRM or security vulnerabilities. Anyway, with keto you want to make biltong, not jerky. Jerky recipes all have added sugar. People do not usually dry fatty meat because the fats go rancid and it has a shorter shelf life, although you can use it if you're going to eat it within a few weeks and store it in the refrigerator. The fats will make it softer. Water content will also make it softer, but also defeats the shelf life purpose. The molasses in brown sugar or a little corn syrup is what makes commercial beef jerky so soft.

Oven jerky will never be comparable to jerky lightly smoked over a fire. But it should be possible. Just set it for a really low temperature and experiment with it. Do tiny test batches until you get it right.

fellow fitfag here, beef jerky isnt actually that great for keto. For jerky to be reasonably tasty, there is a good amount of marinading that happens. It's rare for there to be no added carbs. Another point, is that when entering ketosis, the higher fat|protein ratio is better. Too many people make the mistake of going high protein and not being able to enter ketosis as excess protein can be converted to glucose. If youre dead set on making beef jerky, most marinates are pretty carby.

Damn, really? I was hoping it could substitute sugar with something like Stevia or whatever to balance it out. I'm kind of struggling a little to figure out what I'm supposed to eat while on keto, I get lower carbs but now that I'm putting some more effort into this I'm finding carbs in EVERYTHING. Any suggestions?

1 cup soy sauce
1/4 cup teriyaki sauce
1/2 tsp garlic powder
1/2 tsp cayenne red pepper
1/2 tsp lime juice
1/2 tsp liquid smoke
This is enough to make 3lbs, i use rump roast and ask the butcher to cut it as thin as possible but not too thin that light shows through. Like around 2mm. For drying it takes about 12 hours in mine but i like it pretty damn dry, but since you have the oven idk on the time you will have to figure that out.

People who do not usually have fatty fat because fat is quick and have a small life, though you can use it if you will be in a few weeks and store it in the refrigerator. . Fat will reduce. Water sources will minimize, but also destroy the purpose of life. Drugs in red or medium-sized spell are why it is dangerous to commercialize commercial mail.
