Cooking distracts me from my constant suicide thoughts and existential crisis of being a loser in my 30s. .So for an hour I can focus on something completely besides that and it brings me just enough joy to add it to the list of "reasons to not kill myself tonight" after doing it.

desu I am incapable of pushing myself to cook a meal if it takes longer than 30 minutes of my time, the only exception to this being Christmas dinner. I've got simple tastes, rarely eat meat, and veggies cook fast af.
The only time when I was willing to invest more of my life into preparation of meals was when I was in this horrible relationship and he didn't ever come to the kitchen when I was cooking, so 2 hours of cooking = 2 hours of time when I was left the fuck alone.

Sounds like you're cooking too slowly and eating too quickly. For me even an elaborate meal takes only a little over an hour to prepare, and at least half an hour to eat.

This is why I don't cook, it's just another chore like cutting the grass or doing laundry, thus I treat day-to-day meals as simply "filling up the fuel tank" and do my "eating for enjoyment" at restaurants.
