Recently went through a six pack of Asheville Brewing Company’s Lemon Space Dog, an American style wheat ale brewed with lemon zest. Shit is refreshing as fuck. It pairs very well with meat-heavy pizza and fried bar food. Great example of how American styles can actually be really good.

Too many factors determine how bitterness is perceived IMO like for example how fresh the bottle /can is, or how you react to different kinds of bitterness, or like you mentioned balancing taste factors, for me to even bothering reading the IBU. Of course if someone is trying to meme a huge number on the front label I notice it but I don't care. For example I tend to find juniper based drinks bitter still but hop bitterness I've almost lost the ability to react to because of habituation.

Honestly, there's a massive amount of 20-some dollar 750ml imperial stouts out there--if you like the style, you'll probably like most of them if they have a decent following/hype. I have tried working on the pairings on some occasions. The brewdog show had a recommendation for chimay rouge and lamb, the combination was excellent. I had chimay blue with a cheese that utilized the same beer as an ingredient, superb. Generally I try to pair spicy foods with hoppy brews and hearty/meaty dishes with dunkles or robustly malted beers, seems to be fine. I think it is worth the effort to think of complementing food/drink pairings.

On another matter, christmas beers are getting around. Might not be able to get them from the season, but if there should be any leftovers I reckon getting them would be a plan. Any favourites you can speak for?

Minnesota, I'm a big fan of Castle Danger Brewing, along with Bent Paddle and Surly. If you get out here and want a brown ale, I suggest Surly Bender or Coffee Bender, depending on how much you like coffee. Bent Paddle's 14 ESB is marketed as a bitter but drinks like an amber ale and is also phenomenal. Castle Danger's whole lineup is great, but their cream ale and stout are definitely my favorites. If you're a fan of lagers you should check out Bauhaus, they make some of my favorites. Great schwarzbier in particular.

My friend (who is not into many craft beers) swears by it and says it's amazing but when I bought it I almost certainly got a faulty bottle because it tasted like fucking Malibu drenched in some cloying sweetness. Every hint of chocolate was long gone.

I thought it was ery good and drinkable given it's high ABV but I also agree with you that I've had better tasting stouts for cheaper. I have another bottle that I am going to age for a year. I'm hoping it mellows out and the Vanilla comes through more then.

I popped open my CBS last night and thoroughly enjoyed it, I feel it's the smoothest Barrel Aged stout I've ever had and would prefer it over KBS(But that's just me)

From my experience I got my gf into hard Ciders and then she slowly moved into sour beers.

If you have any 2 Towns Cider House in your are I'd try to get her into that. If not, try and look for Strongbow's Cherry Blossom Cider, she loves that as well.
