I know you’re just having a laugh, but why are some people so pretentious about hot beverages? It’s not difficult nor does it require any special equipment to make a decently delicious cup of coffee. Sure a well-made coffee from high-quality beans and equipment is especially tasty, but a pot from a regular drip-brew coffee maker with middle-quality beans isn’t bad either. Hell, even a Keurig-made cup loaded with a decent kcup or even fresh grounds in a reusable cup is delicious and invigorating.

This is a bad argument. You're calling all different varieties of beans "just coffee" to insinuate that they are all the same, when even simply varying the roast level has a huge impact on flavor. I'm pretty sure the idea that boiling coffee makes it bad is an old wives tale. As long as you don't brew for a too long time, it won't over-extract. I've tried brewing coffee in temperatures ranging from 75 to 100 C, and while there are certainly differences, I don't think one temperature is inherently better than the other. Whether you want to brew relatively cold or hot depends on what the bean has to offer.

Of course the finer your grind and the hotter your water, the narrower the window of optimal extraction gets, so it's certainly easier to fuck it up at higher temperatures since the perfect total extraction time could be as short as 30 seconds, where being off just 5 seconds in one direction or another might mean an over- or under-extracted cup.

Then brew for a shorter time. What happens when you take coffee and brew it at a boiling point for a duration of 1 second? Does it over-extract? No, it under-extracts. Now boil it for 5 minutes and you're sure to have over-extracted bitter coffee. Thus we can mathematically prove that somewhere between an extraction time of 1 second and an extraction time of 5 minutes, there exists a point where under-extraction starts to turn into over-extraction, i.e. the optimal extraction time. You can absolutely get a palatable cup of coffee even at boiling temperatures as long as you don't brew for too long. There's nothing magical that happens at 205 F, even though many call it the maximum temperature. This should be obvious to anyone with a decent knowledge of chemistry, and the understanding that chemical reactions don't just suddenly turn on at a specific temperatures.

I think it's important to turn the heat off when the coffee has all made it to the top. If it's too fine, you might extract too much of the bitter shit.
Many people hate blade grinders because they just chop up beans, leaving boulders and silt at the same time.

Extremely expensive equipment and autistic attention to detail. Not worth making at home otherwise.

Just go to a good third wave shop and get it. But note a lot of shops are pretty shit at espresso, have to find a rare good one.

Also Italians are horrible at coffee, contributed almost nothing of value besides very general ideas (I'll grant that they invented espresso, but they're shit at it), and we shouldn't listen to their traditions for it.

>> No.9776541

I'll list some of Italy's "contributions" that make coffee worse to this day.

Blends.

Darker roasting, should have left Nordics in charge of roast level.

Shit tier grinders like Mazzer with piss poor alignment, burr design, and retention. Even fucking Spain has better grinders.

The hopper and the doser.

The thermal mess that is e61 (I will admit they made some proper groupheads too, LM Linea, Strada, etc).

The heat exchanger.

Poor fitting tampers.

Imprecise baskets.

Focus on speed to the point taking the time to distribute is unthinkable to most shops today.

Lack of weighing input/output.

Using milk enough to justify a steam wand. Seriously, steam capability is the stupidest fucking thing for an espresso machine. You need a whole second boiler and all the expense that brings just to make fancy hot chocolate.

Adding milk to drinks at all.

Home machines with no PID. Fuck Gaggia for being willing to even sell people that useless garbage.

The Americano (yes, American GIs are responsible for asking for it, but they should have refused to taint their drink).

Cups made to hold heat on something that gets more flavorful as it cools.

The single shot.

Spouted portafilters. Should have been bottomless from day 1.

Caring about crema volume.

Ridiculous shot ratios.

>> No.9776565

>>9776553
Didn't include that because anybody can carry a sugar packet with them, and they're FAR from the worst offenders for sugary drinks. I aint gonna pretend Starbucks "enough sugar for dessert for four people for a week" level drinks are inspired by a teaspoon of sugar in a shot.

>I aint gonna pretend Starbucks "enough sugar for dessert for four people for a week" level drinks are inspired by a teaspoon of sugar in a shot
Well, a teaspoon of sugar (4g) added to a 1oz shot of espresso would make it 12.5% sugar. There are 66 grams of sugar in a Grande Caramel Frappacino (16oz), which would make it 14.5% sugar.

Not too different, but I get what you're saying.

>> No.9776599

The only positive is speed, which should be irrelevant. Meanwhile beans get hot from proximity to the motor and because minimal attention is paid to retentien, since it'll be hoppered. So cafes are stuck to one coffee per grinder even if they take the hopper off. With a proper single doser, they could offer a much wider selection of origins.

What are the good luxury coffee bean brands going?

Just started grinding and french pressing coffee beans for the first time and enjoying it. Coming up to christmas I can ask people to get me packs of quality beans as they're asking for present ideas and there's nothing much I want. But I have no idea what's a sure bet or what to avoid.
