Spinach tomato cream sauce over pasta.

4 Cloves fresh garlic
2 Shallots
1 16oz can chopped tomatos
1/2 Cup finely grated Pecorino Romano cheese
1/2 Cup finely grated Parmesan cheese
1 Tablespoon butter
1/2 Box of pasta of your choosing
1/2 Cup chopped pancetta
1/2 Cup heavy cream
Spinach
1/3 Teaspoon oregano
1/3 Teaspoon basil
1/3 Teaspoon thyme
1/3 Teaspoon parsley
Black pepper

Start by mincing up your garlic and shallots. Toss the diced up pancetta into a cast iron pan with the butter. When the pancetta bits are browning, toss in the garlic and shallots.

When the shallots soften up a little, toss in your spinach. I am not very precise with the spinach. I tend to just use big handfulls, so depending on the size of your hands and how much you pick up at a time, this may vary. Use however much you're satisfied with. I recommend 4-6 big handfuls. When the spinach has cooked down, add the tomatoes, black pepper and herbs. Then add the cream and slowly stir in the finely grated cheeses.

Simmer it for a little while so the flavors can mingle and the ingredients get happy, then pour it over cooked pasta. If you find the sauce is not thick enough, consider stirring in more finely grated cheese or some potato flour.

Simple, delicious and healthy pasta dish. While you're making this, consider making some garlic bread by putting garlic and olive oil into a food processor, spreading the result on sliced baguette and finishing it in the oven.
