German food is just okay. Great beer, great sausages, some okay potato and noodle dishes, and some cheeky stuff like pretzels. Its nothing to write home about but its got its pros and cons like every other cuisine.

Dishes from the mountains regions are pretty awesome. Beef pounded flat and wrapped around onions and pickles with cream, and possibly mushroom is awesome. As are their sausages and schnitzel. And cherry brandy.

Are you saying I need to smoke a bunch of weed before eating French cuisine to understand why a bunch of autists have religious levels of zeal for putting French cuisine leagues above all others?

French coffee is really fucking good, i'll give y'all that. And small French towns are nice.

I am a fan of schnitzel, but I make mine with a polish recipe my wife has. She calls it "kotlet."

For this recipe, boneless chicken breast is used as opposed to pork. The breast is pounded and then coated with mustard. I like French's for this because it is sharp and tangy, but it is all preference. The coated meat is then covered with breadcrumbs, dipped into raw mixed egg, and then breaded again. it is then placed in a hot pan with shallow oil. I use Canola oil for this. The meat is cooked until both sides are a golden brown.
The kotlet is served with a baked sweet potato and a side salad.

This reminds me of a French dish I learned to make years ago from a French chef, except we used bone in chicken thighs and roasted them instead of pan frying. Called Poulet Devile`.
>lightly rub chicken with oil, roast.for 5-6 minutes each side
>remove from oven and gather drippings
>combine grainy or Dijon mustard with finely minced garlic, minced parsley, and fresh ground pepper ( we used white pepper, but black is fine)
>slowly whisk drippings into mustard mixture to make a sauce-like consistency
>brush chicken with mustard mixture
>back in oven for 4-5 minutes
>remove and brush chicken again, then roll in fresh breadcrumbs to coat
>back in oven until golden brown and cooked through

Good stuff.

Oven temp is 375F, if I remember correctly. I'll go pull the recipe and double check in a minute, though. I usually serve it with some kind of potato dish. In the restaurant, we'd do more fancy potato preparations, but at home I usually do roasted potatoes (since they can go into the oven alongside the chicken). So potatoes, plus either a salad or other green vegetable like asparagus, green beans, or sauteed spinach.
