taquitos could mean little tacos or deep fried tacos also known as tacos dorados, and yes theyre mexican.
fajitas is just a strip of any grilled mean, like chicken or beef, they come with bell peppers onions, sometimes cheese and bacon, they are different variations and theyre know as discada (north), alambre or parrillada.
I think nachos arent mexican.

Some cattle lovers argue that if it doesnt have cheese in it then its just a taco de guisado.

Im going to explain the differences.
A quesadilla starts as a masa (corn flour dough) ball and its cooked on flat griddle plate.
A taco de guisado starts as an already made tortilla filled with any kind of "stew".
