Rate my din-din. Sirloin marinated for two hours in lime juice, soy sauce, a little bit of oyster sauce, minced garlic, and chopped jalepenio. The salad is cucumber and radishes with ginger drinking vinegar and a sprinkle of kosher salt.

I prefer my steak a tiny bit more well done than that, but no points off cause to each his own. Rice looks bland, raw cucumbers should be like a salad or something rather than part of the main course.

5/10, use some broccoli, Brussels sprouts, or asparagus instead, spice up your rice with some flavor or use mashed potatoes

Don't marinate sirloin, but if you must: 2 hours isn't enough time for the flavours to penetrate the meat.

generally one doesn't do that kind of a marinade on a regular full size steak. it's done on things like skirt or flank steak or thinly sliced pieces. see how it's separating on the outer bit - very noticeable on the bottom left of the picture? that's because the acid in the lime broke down some of the connective tissue and it gets a poor texture.

secondly, you can't sear that kind of marinaded meat properly to cook the steak correctly (that's not even medium rare) without burning the sugars in the lime/oyster sauce and the garlic/jalapeno. again, that's why you do it on thin pieces of meat that will cook quickly before everything else burns

OP here, thanks for actual good advice. I’ve used this marinade before on flank steaks, and my dad is visiting me so I figured I’d cook a nicer cut with the same recipe. Also the radishes are sliced too thick because I fucked up cutting some, so I took those while serving them from the bowl so my dad got the good ones.
I don’t know if blue is patrician or not, it’s just the way I like to eat steak. It just tastes better to me that way. My dad got his medium well.
