Best advice I can think of is twofold:
-factory farmed chicken breast is very lacking in flavor. I'd suggest cooking legs instead--they are much tastier, and they are easier to cook. But if you insist on breast see if you can get chicken from an Asian market, like Vikon or "Buddhist" chicken; that is free ranged and tastes a lot better than supermarket chicken.

-As for cooking your chicken breast, make damn sure you don't overcook it. Use a thermometer if you're a noob. There's a fine line between properly cooked and overcooked-and-dry-as-fuck.

MArinate boneless, skinless chicken breasts in italian dressing overnight. Grill them. Cut into bite sized chunks go great in baked potato or on a salad.

Sounds like the meat itself is very lacking in flavor, hence the need for strong marinades and/or seasonings.

I've got nothing against using spices or seasonings, it just seems silly to start out with flavorless meat when you have an alternative. Spices + bland chicken might be OK, but spices + good chicken is even better.

I've been making chicken gyro pitas. All the ingredients are store bought but fuck it
>chicken seasoned with garlic, onion powder, red pepper, black pepper and salt
>Frank's red hot sauce
>tzatziki sauce
>tabouli
>hummus
>chopped raw tomato, onion and cucumber
>splash of lemon juice
>pita bread

Another favorite is chicken pesto alfredo

>1/2 chicken seasoned same as above
>sauce is 1/2 of parents' homemade pesto
>1/2 store bought alfredo sauce (again fuck it; I'm not making it from scratch for such a small amount)
>a few strips of bacon chopped up

I save up the juices from cooking in the freezer and when I have enough, I use it to make gravy with the same seasoned chicken and also make mashed potatoes and stuffing.

I save up my bones in the freezer and make chicken soup with the usual veggies

I like to pound my chicken breasts flat to about half an inch.
They cook quicker and more evenly resulting in a jucier meat.
You can bread and fry them or bbq them.

I prefer thighs to breasts though.

I read the OP and tried to think of my favorite chicken dish, and my mind went blank. I eat chicken, of course, but I prefer so many other meats or fish.
Anyway, I guess I'd have to say my favorite is roasting or rotisserie chicken ( I have a rotisserie on my grill), and then using the leftovers to make curried chicken salad with the meat and stock from the carcass.
