This is the western North Carolina. My dad lives in Mooresville and this is the kind of slaw they use there. I grew up in the Eastern part of the state where we do the mayo base. I actually like both.

While we're on the topic of Carolina BBQ, I'll share the recipe I've developed for actually decent slow-cooker pulled pork. I took notes from both actual barbecue recipes and a few different slow-cooker methods. The result doesn't quite match real pit-smoked barbecue, but it does a good job for something you can make in an average kitchen.

Ingredients for the Pork
>4-5lb boneless pork shoulder roast, also called Boston butt
>1 large sweet onion
>1 green apple
>2 teaspoons kosher salt or sea salt
>2 cloves garlic, pressed
>2 teaspoons black pepper
>2 tablespoons brown sugar
>1 teaspoon red pepper flakes
>1 teaspoon chipotle chili powder
>1 teaspoon regular chili powder
>1 teaspoon mustard powder
>1/2 teaspoon cayenne
>1 teaspoon sage
>1 and 1/2 cups apple cider vinegar
>1 tablespoon liquid smoke

Mix sugar, salt, and spices in bowl. Set the pork on a sheet of plastic wrap big enough to cover it, then pat dry with paper towels. Rub the whole thing down with the sugar/spice mixture. Wrap it up tight in the plastic wrap. Set it in the refrigerator on a plate(to catch any leaks) for 12 hours. When the pork is ready, slice the onion and apple into rings. Lay half of each on the bottom of the slow-cooker pot. Place the pork on top of them, then layer the rest of the onion and apple on top. Gently pour the vinegar and liquid smoke over it all. Cover and cook on low for 6-8 hours. While it cooks, prepare your favorite sauce and slaw recipes. When the pork is done, pull it apart in the pot with large forks and a knife if needed. It should practically fall apart by itself though. Serve hot on toasted hamburger buns with slaw and sauce.

Damn, I forgot the crucial step between dry-rubbing then pork and putting it in the slow-cooker! First, you should put the pork in a roasting pan and broil it in the oven for a bit. You want a good sear on both sides of it, so take it out and flip it once you see a crust form on the first side. Save the drippings and pour them into the slow-cooker when you add the vinegar.

Windsor is a four hour drive, but that is Canada's Detroit.
Chicago gets included in a "Great Lakes" region that crosses many state lines and Canada. The lakes are/were a major transportation route, but if you're on road or rail, the lakes get in the way. So a lot of cross country traffic is routed through here, or at least was, until you could "fly over".
Downstate Illinois is shit and they actually hate Chicago, they are a bunch of Trumptards who cant stand living in a blue state just because one city way in the far corner dominates everything.

Ohio has a lot of weird stuff generally speaking...not Minnesota strange, but odd enough. Cincinnati chili is an anomaly, but Bourdain loves it and I grew up with one in Cleveland. Speaking of Cleveland and I suppose Northwestern Ohio in general, the biggest regional cuisine items that come to mind are the polish boy (kielbasa in a bun with some variation of hot sauce/bbq sauce, french fries, and coleslaw), but I could also swear that some locations sold it as a plain polish sausage with options of onion and mustard when I was a kid. Otherwise, Cleveland Cassata cake (very popular at weddings), clam bakes, coconut bars (similar to lamingtons), city chicken, which was a popular item in buffalo and pittsburgh as well at one time, and very popular during the 30s. Otherwise, not Cleveland per se, but Swenson's Galley Boy and Barberton chicken deserve a nod. There's also of lot of Italian, Hungarian, and Polish food in Cleveland generally speaking. I miss the paprikash and the pierogis and the pizza, despite also having lived in New York and Maryland, which also happen to both make incredible pizza.

Mr. Gene's Dog House on Beekman makes the best coneys imho in Cincinnati. Not in a great in area though.

Otherwise, German food is a thing in Columbus and Cincinnati. Schmidt's in Columbus has incredible desserts like their Windbeutel. Goetta in Cincinnati. It's like scrapple for those of you who know what that is.

As a foodie....I find it lackluster and always have good intentions when i give it an order again, but end up in disappointment. I get that it is a way to serve fries with some kind of garnish that isn't ice cold like ketchup or mayo could be, but wouldn't it be best to have meat with your gravy. Gravy without the food that actually made the drippings is weird. Soft fresh cheese that doesn't stick to the food like shredded cheese would is also weird. Sogging out fries on purpose seems silly. Mexicans have queso fresca, so similar, but they GRATE it when using it as a topping, or they slice it in slabs and panfry it like greek haloumi. Deep fried crispy coated curds are delicious, why not drop those into the fryer with the potatoes...it just seems an unfinished bad cook conglomeration of things that don't work on their own. Add to that the low quality jarred gravy with the glisten of corn starch thickener and specs of dried pepper.
If I really wanted fries and my beef mood tackled at the same time, could have steak frites and be happier. If I was cheese on my fries, I might go for chili n cheese fries, loaded fries, etc. I
