I want to make candy for Thanksgiving.
What are some good recipes and tips for making candy?

Don't fucking burn yourself with liquid sugar. It's literally worse than any burn you can get.

Dipping your finger in the molten sugar and then QUICKLY into cold water will determine what stage the confection is in. I've only made brittles so it was easy for me, the hard-crack stage is easy to identify. However the sugar turns out is how your confection will.

Should you choose to brittle, adding a small amount of baking soda near the end will darken it, and spreading it out as quickly as possible will ensure a crunchier product. Also generic boiled peanuts are actually better than Planters most of the time. They stay in one piece and don't overcook as easy.
