Country ham is also salted to the point that it needs to be rinsed a bit before cooking. It’s not fully cooked by the curing process by the way. The traditional way to prepare country ham is to rinse off the salt a bit, throw it in a hot pan, and then pour a little black coffee over it as it cooks. WaHo has played a surprisingly large part in my life.
