I am a lot more lazy when I cook for myself in fairness, I only put the bare minimum of what I need nutritionally on the plate, but the ribs were tender to the point of falling off the bone, the chips were lightly crisp and fluffy on the inside. In fact the only disappointing thing about this meal is I used cheap ingredients I.E Store bought sauce and shitty factory made rosemary.

Here is a dish I make on special occasions.

It's hot smoked salmon I smoke myself on a bed of couscous with avocado and lime slices. The sauces I make for it are:

Chermoula a marinade used in Algerian, Libyan, Moroccan and Tunisian cooking. It is traditionally used to flavor fish or seafood, but it can be used on other meats or vegetables. Common ingredients include garlic, cumin, coriander, oil, lemon juice, and salt. Regional variations may also include pickled lemons, onion, ground chili peppers, black pepper, saffron, and other herbs.

And a basic, lime juice, oil and diced chili sauce.

It is a bit time consuming and expensive but is always popular. I strongly recommend it.

I'm actually a chef. I also own a successful restaurant in upstate ny. A lot of these dishes look like Crap. Some look really good. Most, I can see the work put in and the creativity on the plate.
