Just made macaroni and cheese with smoked cheese, smoked sausage and red onion

The taste is incredible, don't know why I never thought of using smoked cheese before

1 large red onion, peeled

500 grams/1 pound dry macaroni elbows

500 grams/1 pound smoked precooked sausage (I used smoked saveloys here, not sure if America has those)

2 cups /16 fluid ounces/500 ml milk

250 g or half a pound of grated smoked cheddar cheese

50 grams or 1/4 cup butter

2 tablespoons of flour


1. Put the macaroni into a pot of salted boiling water, add a little oil if you want to make it stick less.

2. While the pasta boils, cut up the onion and cut the sausage into thin slices (but not paper thin). Put them aside.

3. When the pasta's ready (mostly soft but still a little firm to the bite), drain the water and put the pasta, onion and the sausage into an oven dish and mix them up well. Put the dish aside.

4. Start heating up your oven at this point, turn it to 220 C/430 F.

The Bechamel/cheese sauce:

5. Melt the butter in a pot on medium heat, add the flour and stir continuously until the mixture is smooth and thick. You can add salt and pepper here if you want.

6. Gradually add the milk, stirring continuously until smooth and bubbling.

7. Put in most of the grated cheese (we're saving some to sprinkle on top at the end, I use about four fifths/200g here), continue stirring until all the cheese is melted and the sauce is smooth.

8. Pour all the sauce into the pan from earlier with the macaroni, sausage and onion in it. Mix the whole thing up well so it's all cheesy and evenly spread out in the pan.

9. Sprinkle your remaining cheese over the top.

10. Place in the preheated oven for about 30 minutes, until golden brown like in my photo.

Forgot to add, obviously this is extremely fattening. I'm in decent shape because I only cook like this once a week.

I'd estimate this feeds about six people, or four if they're feeling gluttonous like I was today.

sounds okay. nice job. maybe use asiago and smoked Gouda some time along with what ever other cheese you would add to that. i guess cheddar?
