Basically, there's a lot of great ways to eat shrimp. I don't recommend grilling or cooking dry over high heat, it makes them too rubbery, imo, even when you don't overcook them. They just get dried out too easiy.

Chili shrimp.
Dredge in eggwhite, potato starch, then wine, salt and pepper, and fry for a couple minutes.
In another pan, fry a clove of finely minced garlic and a knuckle of finely minced ginger, along with an equal amount of doubanjiang. When aromatic, add an equal volume of ketchup. (so 1 garlic:1 ginger:2 doubanjiang:4 ketchup) Once it starts to bubble throughout, add half or 2/3 cup chicken stock, the shrimp, and some chopped green onion, and bring back to temp while seasoning with wine, salt, pepper, and egg yolk. Once it's warm, and don't let it go too long or the shrimp will get chewy, thicken with potato starch if necessary, add a dash of rice vinegar and sesame oil, and serve with a garnish of lettuce.

- peel shrimp
- take the shells, throw em in the pan with some olive oil and cook. this is your stock to cook the shrimps in.
- take out the shells and siff the oil.

this should be your base for most shrimp fry recipes.

I personally like them with pasta + garlic+ a bit of fine diced onion.
