In my opinion you have that backwards. Most pro chefs know very little about food science. Instead they parrot what they learned when they were trained by other chefs. Knowledge about food science suggests that he either has a background as a scientist, or he learned it relatively recently. Until the publication of Modernist Cuisine and On Food and Cooking by McGee the whole idea "food science" was limited to a handful of avant-garde cooks like Ferran Adria, or food scientists (researchers).
