post something you use a lot
or something you think every home cook should have

this is literally a godsend for making stock. ultra fine mesh gets little bits of fat that would otherwise get pushed through, as well as vegetable fibers.

It's just a filter. It's just for stock, not a broth, but pretty handy.

There's a big difference when you need to extrude garlic or crush it. A garlic press extrudes, fyi. The big ones where you can put in an entire bulb of garlic are really nice when you have tons of garlic to extrude.

the spread of silicone bakeware in general is the best thing to come out of the 21st century thus far. silpats, muffin tins, spatulas/tongs, fuck man. this shit is a miracle material; literally cannot be overheated and cleans off like nothing was ever there.

High temp use has problems, especially with low quality brands that have fillers. Things like chemicals leaching into foods and odor transfer to food.

Yes. Even this musical instrument has the name because of that shape. Called a Chinese Hat or Chinese Flag since it looks a bit like both.

Well, I worked in a kitchen and it's the one thing I used the most. Whenever I had to work to do prep the thing I used the most were a knife and a cutting board and if I ever had to work the grill I had to tongs, chopsticks and a deep fryer skimmer (also a spatula)

like i mentioned earlier, root vegetable stuff. potato purees, turnip/celeriac/parsnip/carrot. i always ramp up usage in the cold months when those are plentiful.

it's also great for starchy non-root-vegetables like cauliflower

Both types force food through a perforated screen and what makes a difference (for the food) is the size of the holes.

The conical version pictured here can process more food before the screen is fully clogged (more screen surface), and usually you can just pop out the cone and empty the skins and seed. Whereas with the traditional food mill you have to disassemble. With some foods (whole tomatoes) you may have to pass them a couple of times through the mill to get everything.

Why choose one over the other:

If you are processing bushels of stuff, I wouldn't even think of the traditional food mill. It takes hours to make ~200 jars on the conical mill. I'd become a zenist if someone handed me a traditional mill with bushels of tomato.

For home use and cooking for under 20 people the traditional mill is great since you can just place it over the pot and go. No mounting fuss, and fits into a normal cupboard.

I was given a pair of magnetic tongs for your toaster so you don't burn your hands. Admittedly useless for americans who only toast bread, but for a brit who toasts crumpets and muffins it is great.

>> No.9528972

>>9528026
couldn't you just use a pair of kitchen tweezers or something? and whats the purpose of them being magnetic? is your bread super high in iron content over in bongistan?
