The "standard" American BBQ is similar to the Kansas City regional style. They use a molasses based sauce. It is applied during the cooking process and glazed onto the meat with the heat of the grill, and is usually used with pork. Adding an acidic, sugary, sauce to a rich meat is nothing new. It may or may not be burned, you can't really tell without tasting. It could just be a spice rub that uses a lot of black pepper or some other darker spices. Or it could just be from the meat being smoked for a long time over a low heat (less than 250F). The first two look like they might be burned, but like I said you can't really tell without tasting it. If they cooked the meat at a temperature that was too high it'll be bitter on the outside but if it was done properly it might just taste almost like a savory dark caramel or dark chocolate.
