Chicken used to be a delicacy before factory farming, and the French still treat it as a special occasion food, almost like goose or turkey. So yes, yes they do, if anything the peasants never ate chicken because it meant giving up a regular supply of eggs.

Probably because that filet has clearly been prepared using relatively advanced and high effort cooking techniques. In this case it seems to have been constantly basted as it was cooked otherwise its difficult to get that uniform and consistent outer texture.

I think he's referring more to when big cities started becoming a thing so rural families began to dwindle in the 18th/19th centuries. But since it was still rare for a chicken to be slaughtered for meat, the normal folk that lived in cities couldn't really get it because it was either eaten by the poorer farmers or sold to the aristocracy.

Have also been around/ am friends with "very upper class" and it all depends on their childhood with some exceptions, one of them bejng that it's very common that the wives don't eat carbs, are always training and are very healthy, even those that aren't strictly "trophy wives"
