So I left a package of Jarlsberg cheese slices in the fridge, and I guess I didn't seal it well enough because after a few days, the outermost edge of the top slice has gone hard and is slightly darker in colour. What does it mean?

Real Norwegian Jarlsberg is probably the best cheese there is.

Too bad it's cheaper in Sweden imported from Ireland due to weird rules. Not as good, either.
