Normally I like a 4-5. But I've been buying lots of fresh bread lately. It kind of toasts the edges like a 6, but the middle is like 3. It's kinda shitty but I guess there's too much moisture or whatever.

Up to 3 is the right answer, if you need to crisp it beyond that then you bought really bad quality bread. Proper bread should already have good texture, the toasting is simply to heat it up more than drying it, crisping it, or browning it.
